A delightful experience as always, I really like the way that French and Japanese cultures are mixed in the course. Each plate tips towards one of the 2 cultures but still strives for the other, adjusting the taste of a classic Japanese or French dish to suit the other culture, keeping the whole meal balanced in the middle. A fantastic vision of mixed cuisine in my opinion!
